Tex-Mex Casserole from KrazyTxan:

This if for any lovers of tex-mex enchildas.

Ingredients:
14 medium corn tortillas
1 pound 96 % lean ground beef
1 can Ranch Style Beans (original, not just pinto)
4 cups 2% shredded cheddar cheese
1 can 98% fat free cream of chicken soup
1 can Rotel tomatoes
1 small can sliced black olives
1 cup chopped onions

Brown 1 lb. hamburger meat and add ranch style beans.
Take tortillas and cut into 4ths.
Line bottom of 13 x 9 dish with the tortillas and cover them with the meat and bean mixture. (Use about ½ the tortilla
Add onions and top with 2 cups of cheese.
Add a second layer of tortillas.
Mix Rotel and soup and pour over the top.
Top with 2 cups of cheese and olives.
Bake at 350, for 30-40 minutes.
Cut into 12 squares (about 2" x 3" squares)

This is one of my favorite recipes. If you have a small family, you can
freeze the small portions for later us. Also, I bet you could turn this into
a taco salad to get the veggies in or subsitute ground turkey meat.
