Tilapia Nuevos
2 Servings
6.5 points per
serving
This is an excellent fish meal. The combination of the slightly hot sofrito (based on the heat of
the pepper you use) with the sweetness of the mango and the salty cheese is
incredible! All you need with this is a
veggie or salad and you’re all set! Of
course you can cut the points by 3 per serving by eliminating the cheese. I got this recipe from the Chicago Tribune
magazine section of July25, 2004. The
original recipe was for Nuevos Tacos,
but I modified it a bit leaving out the tortillas and making a few other minor
changes.
2 Tilapia Fillets 1 Cup cooked and drained
black beans
Coarse Salt Finely diced red
onion
Pepper 1 Finely
diced fresh mango (approx 1/2 cup)
Olive Oil Spray 2 oz. Crumbled queso

follows-make this ahead)
