Tilapia Nuevos

This is an excellent fish meal.  The combination of the slightly hot sofrito (based on the heat of the pepper you use) with the sweetness of the mango and the salty cheese is incredible!  All you need with this is a veggie or salad and you’re all set!   Of course you can cut the points by 3 per serving by eliminating the cheese.  I got this recipe from the Chicago Tribune magazine section of July25, 2004.  The original recipe was for Nuevos Tacos, but I modified it a bit leaving out the tortillas and making a few other minor changes.

 

 

2 Tilapia Fillets                       1 Cup cooked and drained black beans

Coarse Salt                             Finely diced red onion

Pepper                                    1 Finely diced fresh mango (approx 1/2 cup)

Olive Oil Spray                        2 oz. Crumbled queso fresco cheese

Lime wedges                           Sofrito (Recipe follows-make this ahead)         

 

                                               

 

 

1.                  Prepare the fish:  Season both sides liberally with salt & pepper

2.                  Sear the fish:  Heat non-stick pan over high heat.  Spray lightly with olive oil.  Sear the fish on both sides.  Reduce to medium heat and cook about 10 minutes total.  Remove fish from pan.

3.                  Reduce heat to low.  Spray pan again lightly with olive oil and saute the sofrito until fragrant, 1 minute. 

4.                  Serve:  Layer on plate – fish, sofrito, beans, red onion, mango and cheese.  Squeeze on plenty of lime juice.

 

Sofrito

Roughly chop and transfer to the food processor:  1 green onion, 1 cup cilantro leaves, 2 bell peppers, 1 long green chile (seeded) and 1 head garlic.  Pulse to bits about the size of rice.
